Finally got around to roasting a chook in our new oven. And it was THE BEST CHOOK EVER!

Well, the best home-roasted chook ever (our local chicken shop is pretty good).

But it also had the best stuffing ever. EVER.

So here for posterity (and mostly so that I don’t forget) is the recipe for the best stuffing ever:

Ingredients:

Three slices wholemeal bread, grilled on low until grown and crispy and torn up roughly into bits (so it will blend nicely)
Six half-rashers of bacon
Stick of celery, chopped roughly into a few bits
Half an onion, or three tablespoons onion powder if you don’t happen to have one handy (I always grind mine “fresh” from dried onion flakes, I find it’s tastier)
One tablespoon mixed herbs
Half tablespoon dried spicey thyme
50g butter, melted
one egg

Method:

Blend.
Shove in chicken before cooking.
Enjoy.
