Shiny things in syrup

I’ve been cooking things in syrup a lot, over the last couple of months.

Quinces:

They look so unpromising before you poach them, and then they look like jewels…

Pears

They looked so beautiful peeled, almost translucent, that I almost regretted poaching them. Almost.

I tried my hand at candying citron from scratch for the first time. It looked so pretty, after the boiling

Then, like the quinces, it ended up looking like jewels

And the angelica I candied had that quality as well:

So shiny…
