Freckle cookies

Haigh’s now make their own version of freckles. So I decided that was reason enough to make freckle cookies.

I used my recipe for smartie cookies for the base, and popped a freckle on each

(In case you’re wondering why I always use such small tins, it’s because our oven doesn’t work and we still don’t have a new one, so I use our convection microwave to bake everything. Getting a bit tedious)

They ended up a bit flat, which I think was caused by the weight of the freckle pushing down on the dough during cooking. Ah well, as my partner said, “they still taste perfectly cookie-y.”
